Spicy Black Bean Burgers with Blue Cheese and Avocado

The idea for these burgers came from a pieced together family barbeque.  The “kids” were sent off to the store to pick up some extra ingredients for the impromptu grill out, and J and I went on a search for veggie burgers.  At this point we realized we’re now totally useless in any grocery store that isn’t Berkeley Bowl.  I couldn’t find anything!  Friends finally helped us find the veggie burgers (near the fish sticks), and we grabbed some blue cheese crumbles (near the tomato sauce?!).  We got Morningstar Spicy Black Bean burgers, and they were great for a frozen burger.  Still, I thought I could imitate them at home pretty well, and this recipe was born!

Spicy Black Bean Burgers

2 pieces of sourdough bread, toasted

2 cans of black beans, rinsed and divided

1 egg

1 teaspoon cumin

1 teaspoon oregano

1 teaspoon smoked paprika

1/4 cup pickled jalapenos

salt and pepper to taste

olive oil


1. Take the toasted slices of bread and pulse them in a food processor until you’ve created coarse bread crumbs.

2. Add one of the cans of black beans, the egg, the spices and the jalapenos to the food processor and pulse until combined.

3.  Remove the mixture to a large mixing bowl, and mix in the second half of black beans.

4.  Form four large patties, and place the patties in the fridge for 1-2 hours.  (This step isn’t essential, but will help your veggie burgers not fall apart when you cook them)

5. Heat a little olive oil in a large skillet and place your patties in the pan.  Don’t move them around in the pan in order to get a nice seared crust on your burgers.  Cook each side for about 5 minutes.


We served these with crumbled blue cheese and avocado, and they were amazingly flavorful.  J added extra sauteed jalapenos to his burger (of course), but I thought they had plenty of kick all on their own. 

I’ve also used this recipe to make 10 mini sliders for a backyard cookout.  If you’re going to grill these burgers, the chilling step is much more essential, as are some awesome flipping skills.   Veggie burgers do tend to fall apart, but I luckily didn’t have that problem with these.  (I really think it was just luck, these may be prone to falling apart on the grill)
